In our lab, flavour meets function.
We infuse with ultrasound and distill under vacuum. We blend and emulsify at high shear while tracking water activity. We weigh to the microgram, pipet to the microlitre, and ferment with precision. We freeze dry, spin down, carbonate, and challenge-test like there’s something at stake.
